DoubleTree Chocolate Chip Cookies Makes 24-26 cookies. Serves: 12-13 people. Preparation time: 40 minutes.

Preheat the oven to 300°F. Mix softened Butter and Sugars in a bowl of a mixer on medium speed for 2 minutes. Add the Eggs, Vanilla and Lemon Juice. Blend that in the mixer on low speed for 30 seconds, then medium speed for 2 minutes until it is light and fluffy. Scrape down the bowl. Add the Flour, Oats, Baking Soda, Salt and Cinnamon and blend on low speed for 45 seconds. Don't overmix it. Remove the bowl from the mixer and stir in the Chocolate Chips and Walnuts (optional) by hand.

Portion the dough with a scoop [about 3 tablespoons each - 2 inches apart] onto a baking sheet(s) lined with parchment paper. Place the sheet(s) into the 300°F oven for 20-23 minutes or until the edges are golden brown and the centers are still soft. Remove from the oven and let cool on the baking sheet for about 1 hour.
