Serves: 6-8. Preparation time: 2 hours.
• Preheat the oven to 375°F. In a large bowl, mix together the sliced Apples and Pears, Sugar, Flour, Cinnamon, and Salt until well combined. Roll out the Pie Crust and place it in a 9-inch pie dish, trimming the edges if necessary. Pour the Apple and Pear mixture into the Pie Crust and spread it out evenly. Dot the top of the filling with small pieces of Butter. Roll out the remaining Pie Crust and cut it into ½ inch wide strips. Arrange the strips in a lattice pattern on top of the filling, crimping the edges to seal the crust. In a small bowl, whisk together the Egg Yolk and Milk. Brush the mixture over the top of the Crust. Bake the Pie for 45-55 minutes, or until the Crust is golden brown and the filling is bubbling. Let the Pie cool for at least 30 minutes before slicing and serving. This French-style Apple and Pear Pie is best served warm, with a scoop of Vanilla Ice Cream or a dollop of Whipped Cream on top.
