Liège Waffles

Liege Waffles Serves: 9.  Preparation time: 120-180 minutes.

  • 1⅓ C. Pastry Flour*
  • 1 C. All-Purpose Flour
  • 1 C. Unsalted Butter
  • 1½ t. Granulated Sugar
  • 3 Large Eggs (Room Temperature)
  • ¼ C. Belgian Pearl Sugar**
  • ¾ t. Flaky Sea Salt
  • 1 t. Vanilla Extract
  • ⅔ C. Lukewarm Water
  • 2 t. Active Dry Yeast

* Pastry Flour: If 1⅓ cups Pastry Flour is not handy, then substitute 1 cup more of All-Purpose Flour instead.
** Pearl, or Nib Sugar is compressed European Beet Sugar found in specialty grocery stores or on Amazon. As a substitute, take ordinary Sugar Cubes and crush them in a Zip-Lock bag with a metal mallet or hammer. Make each cube ½ to ¼ of it's original size. Don't pulverize them.

• Bloom the Yeast in a small bowl with the Lukewarm Water for 5 minutes. It should begin to foam.
• Soften the Butter in a microwave oven, or in a pan on the stove. Don't let it melt to a liquid. Stir it so it's pudding-like. Just soft enough to stir with a whisk.
• Sift the Flours, Granulated Sugar and Salt into a large bowl. Crack the 3 Eggs into a medium bowl. Add the Vanilla and whisk it with the Eggs. Now add the Eggs, Butter and Yeast parts to the Flour mix all at once and whisk until fairly smooth.
• Cover the batter and let it rest at room temperature until it doubles in size. (1-2 Hours).
• Gently fold in the Pearl Sugar lumps. Let rest, covered, for 15 more minutes.
• Preheat a Belgian Style or Round Waffle Maker to medium-high temperature. Scoop ½ to ¾ cup of batter into the Waffle Maker. It's not necessary to fill the form. Time the first one and adjust the cook time of the remainder so they are all brown and crisp. Serve while still hot. The Pearl Sugar makes the Waffle crispy and sweet. Syrup is not recommended but a tart Jam topping or Powdered Sugar is optional.

"Liège" - A major city (200,000 population) in eastern Belgium in the Meuse Valley, not far from Germany and The Netherlands. The main languages heard are French, German, Dutch, English but mostly Walloon (a distinct French dialect). Belgium is noted for Beer, French Fries and Waffles (Les Gaufres). This style is unique to the region, however.

"Blue Bottle Coffee Co." - A chain of Coffee Shops, scattered across California plus large US, Japanese, Chinese and Korean cities. It originated in Oakland, CA. in 2000, famous for Turkish Stye Coffee and Liège Waffles.
