Chicken Milanese with Salad

Serves: 4. Total time: 30 minutes. Chicken Milanese
For the Chicken:
  • 4 Chicken Cutlets
  • ½ C. All Purpose Flour
  • 2 Large Eggs
  • 1 C. Panko Bread Crumbs
  • ½ C. Grated Parmesan Cheese
  • 1 C. Vegetable Oil
  • Salt and Freshly Ground Pepper to taste
For the Salad and Dressing:
  • ¼ C. Fresh Lemon Juice
  • 1 Grated Garlic Clove
  • ½ C. Parmesan Cheese
  • 2 t. Dijon Mustard
  • ¼ C. Extra Virgin Olive Oil
  • ½ t. Honey
  • ¼ C. Fresh Chopped Cilantro, Parsley or Herbs
  • 4 portions of Fresh Salad Greens or Arugula
  • Salt and Freshly Ground Pepper to taste
For the Salad Dressing:
• In a small bowl, whisk together the Lemon Juice, Garlic, Mustard, Salt, Pepper and Honey. Drizzle the Olive Oil while whisking and continue to whisk until the dressing is emulsified. If too tangy, add more Olive Oil. Add Cilantro, Parsley or Herbs to taste. The Salad Dressing can be prepared a week ahead and kept in the refrigerator, covered.
For the Chicken:
• Cover a cutting board completely with plastic wrap. Arrange the Chicken Cutlets in a single layer. Cover with more plastic wrap. Lightly pound the Chicken to an even thickness, about ¼ inch. Remove the top plastic wrap and season the Chicken with Salt and Pepper.
• In a shallow dish, add the Flour. In a second shallow dish add Eggs and beat lightly. In a third shallow dish, combine the Panko Bread Crumbs and Grated Cheese. Stir to combine.
• Working with one Cutlet at a time, dredge it in Flour and shake off the excess. Dip it in the Eggs and tap gently on side of the dish to remove the excess. Place it in the Panko mix and press gently so the Crumbs adhere to both sides. Transfer to a large plate and repeat with the remaining Cutlets.
• In a large skillet over medium high heat, heat 1 cup of Oil until simmering. Add the Cutlets and sautée until a golden brown and cooked through (about 3 minutes per side).
• While the Chicken cooks, prepare the Salad. When the Chicken is finished cooking, serve each Cutlet topped with Salad Greens, Dressing and Grated Parmesan.


"Milanese" - Relating to the cuisine originating in the Lombardy region of Northern Italy, specifically the city of Milan. The word also refers to the local dialect of Italian that is more closely related to French and Romansh than it is to standard Italian language.
