Strawberry Soup

Serves: 2 people. Preparation time: 10-20 minutes.
- 2 C. Whole Strawberries (stems removed)
- ½ C. Sugar (see note*)
- ½ C. Sweet Red Wine (like Sangria or Beaujolais)
- ½ C. Sour Cream
- Basil or Mint Leaves (optional)
Rinse the Strawberries. Put everything into a blender. Blend until smooth. Chill before serving in a bowl or glass. Garnish each serving with a sprig of Basil or Mint Leaves if desired.
*Note: Start with less Sugar and add to taste, depending on the sweetness of the Red Wine. Artificial Sweetener is also acceptable.
”Strawberry Soup” - This recipe is reminiscent of the cold fruit soups often served on cruise ships, especially Princess Cruises. This is the recipe passed down from my mother. I modified it years ago. It has appeared in the national magazine, Bon Appétit and The Villages magazine last year.
