Blueberry Cobbler

Serves: 6-8. Preparation time: 50 minutes .
Blueberry Cobbler

For the Topping:
  • 1 C. Flour
  • ½ C. Brown Sugar
  • ½ C. White Sugar
  • ½ C. Butter (Cubed)
  • ¼ t. Salt
For the Fruit Mixture:
  • 2 lbs. Fresh Florida Blueberries
  • ¼ C. Brown Sugar
  • ¼ C. White Sugar
  • 1 T. Cocoa Powder
  • 2 T. Ground Cinnamon
  • Pinch of Salt
  • 1 T. Corn Starch
  • Whipped Cream (Optional)

• Pre-heat the oven to 325°F. Blend the Flour, 2 Sugars, Butter and Salt to make a crumbly Topping Dough.

• Place the Blueberries, 2 Sugars, Cocoa Powder, Cinnamon and a Pinch of Salt in a pot, stir and simmer over medium heat for 20 minutes. While this is simmering, make a slurry of the Cornstarch and some Water in a bowl. Turn up the heat on the Fruit Mixture and add the Corn Starch Slurry and stir to thicken. Remove from heat when thoroughly mixed.

• Place the Fruit Mixture in a 9 X 13 inch Pyrex or CorningWare dish. Cover this with the Topping Dough. Bake at 325°F for 15-20 minutes. Scoop out portions onto serving dishes and top with Whipped Cream if desired.


Cobbler - A British and American term for a baked, crust-covered mix of sweet fruit. The term may have originated with the look of a cobblestone pathway or something "cobbled together". Apple, Peach, Blackberry, Cherry and Blueberry Cobblers are the most popular.
