Peach Bourbon BBQ Bacon-Wrapped Scallops

Add the Barbecue Sauce, Peach Preserves and Bourbon to a small saucepan and bring it to a simmer over medium heat. Reduce heat to low and simmer for 10 minutes. The alcohol will evaporate; the flavor will remain.

Arrange slices of Bacon on a paper towel lined plate or a ceramic microwave bacon dish. Cover with paper towel. Microwave on HIGH for 4 minutes or until the Bacon is partially cooked and not yet crispy. Repeat with the remaining slices. Let the Bacon cool.

Wash each Scallop, wrap the Scallop in a slice of cooked Bacon and thread them onto a wood or metal skewer. Fill 4 skewers with 4 or 5 wrapped Scallops.

Preheat the grill or grill pan. Brush each Scallop lightly with Olive Oil and sprinkle with Salt and Pepper to taste. Grill about 4 minutes per side until the Bacon is crispy and the Scallops are opaque. Brush the Scallops on both sides with the BBQ Sauce during the last minutes of cooking.

You can serve the Scallop skewers on a bed of cooked White or Brown Rice, or Risotto with the extra BBQ Sauce.


”Scallops” - A cosmopolitan family of bivalves found in all the world's oceans but never in fresh water. We eat the large muscle of the creature. Some types are swimmers while others live cemented to submerged rocks. The swimmers use jet propulsion to flee their predators. A Sea Scallop can have up to 200 tiny iridescent eyes to monitor their environment. Like Oysters, a Scallop can have a pearl inside. Today, Scallops are farm raised in seawater or dredged in the shallow North Atlantic. "Scalloped Potatoes" contain no seafood but refer to the vegetable being prepared with cream, a traditional Scallop preparation style. Scalloped also means a wavy decorative pattern on fabrics and furniture. The Scallop is a symbol of fertility for many cultures. The Shell Oil Company uses a Scallop Shell for their distinctive bright yellow logo.
