Cheese Soufflé

Serves: 4 people. Preparation time: 50 minutes. image

Preheat the oven to 350°F. Grease the inside of a soufflé dish with about 1 tablespoon of Butter, then sprinkle Bread Crumbs on the greased surfaces.

Melt the remaining 3 tablespoons of Butter in a saucepan and add the Flour. Mix thoroughly. Add the Milk to it, a little at a time while whisking vigorously. Add Salt, Pepper and Nutmeg to taste. Remove from heat for 2 minutes, let cool.

Stir in Egg Yolks one at a time, then stir in the Grated Cheese. Combine these ingredients well.

In another bowl, beat the Egg Whites until they make stiff peaks, then gently fold them into the Yolk Mix.

Pour the entire Mix into the greased soufflé dish and bake at 350° for 30-35 minutes. Avoid opening the oven door to check. Serve warm.


”Soufflé” - Pronounced "Soo-flay'". - The word literally means "Breathe" or "Inflate". This famous French dish is attributed to François Massialot in the early 18th century.
