Chicken Bacon Quesadillas (Sincronizada)

Makes: 4 portions. Serves: 4 people.
Preparation time: 20 minutes.
- 4 t. Vegetable Oil (Divided)
- 4 Fajita-Sized 8" Flour Tortillas
- 1 C. Shredded Colby-Jack Cheese
- 2 C. Fully Cooked Chicken (Coarsely Chopped)
- 4 Slices Crisp Cooked Bacon (Coarsely Chopped)
- ½ C. Pico de Gallo
- 1½ C. each: Salsa, Sour Cream and Guacamole (Divided Accompaniments)
Heat a large non-stick skillet over medium heat and brush with 1 teaspoon of Vegetable Oil. Place one Tortilla in the skillet, sprinkle with ¼ cup of Shredded Cheese. Now spread a half cup of Cooked Chopped Chicken over half of the Tortilla and top with one quarter of the Chopped Bacon and one quarter of the Pico de Gallo.
Cook this 1 to 2 minutes or until the Cheese melts and the bottom is lightly browned. Fold the Tortilla over the filling, pressing with a spatula. Transfer to a cutting board, cool slightly and cut into wedges. Repeat with the remaining 3 Tortillas and ingredients.
Serve with Salsa, Sour Cream and Guacamole as accompaniments.
